• Food to Microorganism (F/M) ratio affect at VFA production
• A maximum production of VFA, measured as g VFA-COD / g substrate COD, of 65% was obtained for milk permeate
• pH is a critical parameter for performance. A very acidic pH lowers the yield
• Butyric acid is favored at acidic pH
