(free)Key outcomes: Effective, targeted strategies for management of sewer fat, oil and grease (FOG) deposits require understanding of the processes involved in FOG formation. The results of this research question the generally accepted model of FOG deposit formation, which posits that saponification is a leading reaction in FOG deposit formation. Proposed novel, 2 step model will lead to significant changes in management techniques. It indicates that treatment could be tailored to growth stage of deposits, leading to improved removal yields. Findings raise the possibility of employing uncouplers to achieve minimalization of FOG deposit formation and accumulation in sewers, offering the advantage of stimulating the existing microbiota at the site, as well as beneficial influence on biological processes beyond dosing point.
